Kale, Sweet Potato and Pomegranate Lunch Box with a Miso Dressing
A delicious and filling #vegan spring lunch box idea for adults. The lentils provide a great source of plant-based protein, whilst the rainbow-coloured vegetables can ensure you reach your 5 a day. Lastly, the miso dressing gives this dish a super flavoursome twist.

1 x 400g can lentils drained
80g shredded kale
125g pomegranate seeds
1 medium sweet potato
For the dressing
2 tbsp white miso paste
15g tahini paste
1 tbsp toasted sesame oil (15g)
Agave or honey (25g)
15ml rice vinegar
1️⃣ Preheat the oven to 220 degrees celsius.
2️⃣ Dice the sweet potato with the skin on into cubes, roast in the oven with a drizzle of olive oil & seasoning for 15-20 minutes or until cooked and golden.
3️⃣ Steam asparagus.
4️⃣ Drain green lentils. In a large pan add olive oil and cook lentils and kale with seasoning for 8-10 mins or until everything has softened.
5️⃣ Mix dressing ingredients together with 1 tbsp water and seasoning.
6️⃣ Serve lentil and kale mixture into a lunchbox. Top with asparagus, sweet potato and pomegranate seeds. Serve with miso dressing a wedge of lime.
